You can make this refreshing strawberry romaine feta salad quickly. It combines sweet strawberries, crisp lettuce, salty feta, and a simple homemade balsamic vinaigrette for a perfect light lunch or side dish.

Ingredients

  • 6 cups romaine lettuce, chopped
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pecans or walnuts, toasted (optional)
  • 1/4 cup red onion, thinly sliced (optional)
  • For the Balsamic Vinaigrette:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Prepare the vinaigrette: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined. Set aside.
  2. Wash and chop the romaine lettuce. Place the chopped lettuce into a large salad bowl.
  3. Add the sliced strawberries, crumbled feta cheese, and toasted nuts (if using) to the bowl with the lettuce.
  4. If you are using red onion, add the thin slices now.
  5. Just before serving, drizzle the desired amount of vinaigrette over the salad ingredients.
  6. Gently toss the salad until all ingredients are lightly coated. Serve immediately for the best crunch.

Notes

  • To toast nuts, place pecans or walnuts in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant. Watch them closely so they do not burn.
  • For a main dish salad inspiration, add grilled chicken or salmon on top.
  • You can substitute poppy seeds for Dijon mustard in the dressing if you prefer a different flavor profile.
  • This salad is best assembled right before you eat it to keep the romaine crisp.
