  • 1 pound raw salmon fillet, skin removed
  • 1/2 cup Kewpie mayonnaise
  • 1/4 cup Sriracha sauce (adjust for heat preference)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded imitation crab meat (optional topping)
  • 2 tablespoons toasted sesame seeds (for topping)
  • 1 sheet nori (seaweed), cut into thin strips (for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Prepare the seasoned rice: In a large bowl, gently mix the cooked sushi rice with the rice vinegar, sugar, and salt until combined. Press the seasoned rice evenly into the bottom of the prepared baking dish. This forms your base layer.
  3. Prepare the spicy salmon topping: In a medium bowl, combine the raw salmon fillet, Kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and softened cream cheese. Mix gently until the salmon breaks apart slightly and is coated in the spicy mixture. Do not overmix.
  4. Spread the spicy salmon mixture evenly over the rice layer in the baking dish.
  5. If using, sprinkle the shredded imitation crab meat over the salmon layer.
  6. Bake for 15 to 20 minutes, or until the salmon is cooked through and the top is lightly golden brown.
  7. Remove the dish from the oven. Sprinkle generously with toasted sesame seeds and nori strips.
  8. Let the spicy baked salmon rice cool for 5 minutes before slicing into squares and serving.
