1 lb ground beef (80/20 recommended)
4 large paratha flatbreads (store-bought is fine)
4 slices American cheese
1 tablespoon vegetable oil
Salt and black pepper to taste
For the Best Smash Burger Sauce:
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon pickle relish
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Instructions
Prepare the sauce: In a small bowl, mix the mayonnaise, ketchup, mustard, pickle relish, smoked paprika, and garlic powder. Stir until fully combined. Set aside.
Divide the ground beef into 8 equal portions (about 2 ounces each). Gently form them into loose balls; do not pack them tightly.
Heat a large, heavy skillet or griddle over medium-high heat. Add the vegetable oil.
Place four beef balls onto the hot skillet, spaced apart. Immediately place a piece of parchment paper over each ball and use a sturdy, flat spatula or burger press to smash the meat firmly and thinly onto the hot surface. Season generously with salt and pepper.
Cook for 1.5 to 2 minutes until the edges are brown and crispy.
Flip the patties. Immediately place one slice of cheese on top of each patty. Cook for another minute until the cheese melts. Remove the patties from the skillet.
Prepare the parathas: Wipe the skillet clean if necessary, or use a separate dry pan over medium heat. Place one paratha in the pan and toast for 1 to 2 minutes per side until it is heated through and slightly crispy. Repeat for all four parathas.
Assemble the burger: Spread a generous amount of the smash burger sauce on the inside of two toasted parathas. Place two cheesy smash patties on the bottom paratha. Top with the second paratha. Repeat for the second burger.
Serve your crispy Indian flatbread burger immediately.
Notes
For the thinnest crispy burger patties, use a heavy press and press hard immediately after placing the meat on the hot surface.
If you like extra spice, add a pinch of cayenne pepper to your burger sauce.
You can use ghee instead of vegetable oil when toasting the parathas for richer flavor.
