Make rich, flavorful biscuits using beef tallow for a traditional taste. These savory herb biscuits are simple to bake and perfect for an ancestral nourishment approach to cooking.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/2 cup cold beef tallow, cut into small pieces
  • 3/4 cup cold buttermilk

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, pepper, thyme, and rosemary.
  3. Add the cold beef tallow pieces to the dry ingredients. Use a pastry blender or your fingers to cut the tallow into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining. This step is key for flaky biscuits.
  4. Pour in the cold buttermilk all at once. Stir gently with a fork just until the dough comes together. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Gently pat or roll the dough to about 3/4 inch thickness.
  6. Cut the dough into rounds using a biscuit cutter. Place the rounds close together on the prepared baking sheet.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown. Serve warm.

Notes

  • For the best rise, make sure your beef tallow and buttermilk are very cold before mixing.
  • If you do not have a biscuit cutter, you can cut the dough into squares with a knife.
  • You can substitute half of the buttermilk with heavy cream for an even richer texture.
