4 large bell peppers, any color
1 pound bulk Italian sausage, casings removed
1 cup cooked white rice
1 cup shredded mozzarella cheese, divided
1 (15 ounce) can tomato sauce
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and black pepper to taste
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
In a large skillet over medium heat, cook the Italian sausage, breaking it up with a spoon, until it is browned completely. Drain off any excess grease.
Stir the cooked rice, half of the mozzarella cheese (1/2 cup), oregano, and garlic powder into the cooked sausage. Season with salt and pepper.
Spoon the sausage mixture evenly into the hollowed-out bell pepper halves.
Pour the tomato sauce over and around the stuffed peppers in the baking dish.
Cover the baking dish tightly with aluminum foil. Bake for 30 minutes.
Remove the foil, sprinkle the remaining 1/2 cup of mozzarella cheese over the tops of the peppers, and bake uncovered for another 10 to 15 minutes, or until the cheese is melted and bubbly.
Let the peppers cool slightly before serving.
Notes
For a low carb dinner idea for busy nights, you can substitute the rice with riced cauliflower.
If you do not have bulk sausage, you can use ground turkey or ground chicken for a slightly different flavor profile.
This recipe works well as a 5-ingredient dinner for a crowd if you omit the spices and only use sausage, peppers, rice, sauce, and cheese.
