  • 1 teaspoon beet powder for red/pink hummus
  • 1 teaspoon turmeric for yellow hummus

  • 1/2 cup chopped fresh carrots for dipping
  • 1 cup sliced red bell pepper for dipping
  • 1 cup broccoli florets for dipping
  • 1 cup yellow bell pepper strips for dipping
  • 1 cup purple cabbage leaves for dipping
  • 1/4 cup olive oil for drizzling
  • Pinch of sea salt

Instructions

  1. Prepare four small batches of hummus base. Keep one batch plain.
  2. Mix beet powder into the first batch until you achieve a deep pink or red color.
  3. Mix turmeric into the second batch for a bright yellow color.
  4. Mix spirulina powder into the third batch until you achieve a light blue or green hue.
  5. Mix smoked paprika into the fourth batch for an orange color.
  6. Arrange the four different colored hummus dips in separate small bowls on a large serving platter or board.
  7. Arrange the prepared vegetables (carrots, red pepper, broccoli, yellow pepper, cabbage) around the hummus bowls in rainbow order for maximum visual appeal.
  8. Drizzle a small amount of olive oil over each hummus portion.
  9. Sprinkle a pinch of sea salt over the entire board just before serving.
  10. Place the board out as a healthy graduation party snack station.

  • To make your own plain hummus base, blend chickpeas, tahini, lemon juice, garlic, and water until smooth.
