Make this vibrant, non-alcoholic Pomegranate Mimosa Mocktail for a sophisticated, colorful drink perfect for brunch or any celebration.

Ingredients

Scale
  • 4 oz chilled non-alcoholic sparkling cider or sparkling white grape juice
  • 2 oz pure pomegranate juice
  • 1/2 oz fresh lime juice
  • 1 teaspoon simple syrup (optional, for extra sweetness)
  • 2 fresh mint leaves, for garnish
  • 1 thin slice of lime or a few pomegranate arils, for garnish

Instructions

  1. Chill your serving glasses, such as champagne flutes or coupe glasses, before starting.
  2. In a cocktail shaker, combine the pomegranate juice, fresh lime juice, and simple syrup if you are using it.
  3. Add ice to the shaker and shake briefly until the mixture is cold, about 10 seconds.
  4. Strain the juice mixture evenly into the bottom of your two chilled glasses.
  5. Slowly top each glass with the chilled non-alcoholic sparkling cider or sparkling white grape juice. Pour slowly to maintain carbonation.
  6. Gently stir once or twice to combine the layers without losing the fizz.
  7. Garnish each Pomegranate Mimosa Mocktail with a fresh mint leaf and a lime slice or a few pomegranate arils. Serve immediately.

Notes

  • To make simple syrup, combine equal parts sugar and water in a saucepan and heat until the sugar dissolves. Cool completely before use.
  • For an aesthetic Mother’s Day mocktail, you can rim the glass with coarse sugar mixed with a pinch of edible gold dust.
  • If you are making this for a crowd, mix the pomegranate juice and lime juice ahead of time and keep it refrigerated. Add the sparkling cider just before serving.
