1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup milk
1 1/2 cups fresh or canned sliced peaches, drained well
1/4 cup brown sugar, packed (for topping)
2 tablespoons all-purpose flour (for topping)
2 tablespoons cold unsalted butter, cut into small pieces (for topping)
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
In a medium bowl, whisk together the 1 3/4 cups flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the egg and vanilla extract until combined.
Alternate adding the dry ingredient mixture and the milk to the wet ingredients, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix.
Gently fold in the drained peach slices.
Prepare the crumb topping: In a small bowl, combine the brown sugar and 2 tablespoons of flour. Cut in the 2 tablespoons of cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
Fill the prepared muffin cups about two-thirds full with batter. Sprinkle the crumb topping evenly over the top of each muffin.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm for the best flavor.
Notes
If you use canned peaches, press them between paper towels to remove excess moisture before adding them to the batter. This prevents sinking and soggy muffins.
For a Southern inspired muffins flavor, increase the cinnamon to 1 1/2 teaspoons.
To make these moist peach muffins even better, add a small swirl of cream cheese filling into the center of the batter before topping with streusel.
