  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 12 ounces wide egg noodles
  • 3 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, toss the chicken pieces with olive oil, salt, pepper, garlic powder, and thyme until coated.
  3. Arrange the seasoned chicken evenly in the prepared baking dish.
  4. In a separate bowl, whisk together the chicken broth, heavy cream, butter, and minced garlic.
  5. Pour the liquid mixture over the chicken in the baking dish.
  6. Scatter the dry egg noodles evenly over the chicken and liquid mixture. Push the noodles down slightly so they are mostly submerged, but do not stir.
  7. Bake for 25 minutes.
  8. Carefully remove the pan from the oven. Stir the noodles and chicken gently to combine, ensuring the noodles absorb the remaining liquid. If the sauce seems too thin, stir in the Parmesan cheese now.
  9. Return the pan to the oven and bake for another 5 to 10 minutes, or until the noodles are tender and the sauce has thickened to your liking.
  10. Garnish with fresh parsley before serving directly from the pan.

Notes

  • If you prefer a richer flavor, substitute half of the chicken broth with dry white wine for the first 25 minutes of baking.
  • For an easy cleanup, line your baking dish with parchment paper before greasing.
  • This recipe works well with chicken thighs if you prefer darker meat; adjust the initial baking time by 5 minutes.
