1/4 cup Lemon Simple Syrup (recipe below)
1/4 cup mixed berry puree (fresh or thawed frozen berries blended)
1 tablespoon fresh lemon juice
1 cup sparkling lemonade or club soda
Ice cubes
Lemon slices and fresh mint sprigs for garnish
For Lemon Simple Syrup: 1/2 cup water, 1/2 cup granulated sugar, zest of 1 large lemon
Instructions
Make the Lemon Simple Syrup: Combine water, sugar, and lemon zest in a small saucepan. Heat over medium heat, stirring until sugar dissolves completely. Remove from heat, let steep for 15 minutes, then strain out the zest and let the syrup cool.
Prepare the Berry Puree: Blend 1/2 cup of mixed berries (strawberries, raspberries, blueberries) until smooth. Strain through a fine-mesh sieve if you prefer a seedless texture.
Assemble the Drink: In a tall glass, combine 1/4 cup of the cooled Lemon Simple Syrup, 1/4 cup of berry puree, and 1 tablespoon of fresh lemon juice. Stir briefly.
Add Ice: Fill the glass with ice cubes.
Top Off: Slowly pour 1 cup of sparkling lemonade or club soda over the mixture. Stir gently once to combine the layers without losing too much fizz.
Garnish: Add a lemon slice to the rim and place a fresh mint sprig into the drink. Serve this craft non alcoholic drink immediately.
Notes
For a stronger citrus flavor, add 1/2 teaspoon of lemon extract to the syrup mixture before cooling.
If you want a sweeter drink, use sparkling lemonade instead of club soda. For a less sweet, more sophisticated zero proof drink, use club soda.
