2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
2 cups buttermilk
1 tablespoon hot sauce
2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
Vegetable oil, for frying
1/2 cup honey
2 tablespoons chili crisp or sriracha
1 tablespoon apple cider vinegar
1/4 teaspoon cayenne pepper
12 slider buns
Butter, softened
Optional toppings: Pickles, coleslaw
Instructions
Place the chicken pieces in a bowl and cover with buttermilk and hot sauce. Let it marinate in the refrigerator for at least 1 hour, or up to 4 hours.
In a separate shallow dish, whisk together the flour, cornstarch, salt, pepper, paprika, and garlic powder.
Remove the chicken from the buttermilk, letting excess drip off. Dredge each piece thoroughly in the flour mixture, pressing the coating on firmly.
Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Carefully add the chicken pieces to the hot oil, working in batches to avoid overcrowding. Fry for 5 to 7 minutes, turning occasionally, until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
Remove the cooked chicken with a slotted spoon and place it on a wire rack set over a baking sheet to drain excess oil.
While the chicken drains, prepare the hot honey glaze. In a small saucepan, combine the honey, chili crisp, apple cider vinegar, and cayenne pepper. Heat over low heat until just warm and combined. Do not boil.
Brush the hot honey glaze generously over the warm fried chicken pieces.
Lightly butter the slider buns and toast them briefly in a dry skillet or under the broiler until golden.
Assemble the sliders: Place a piece of glazed chicken on the bottom bun, add any desired toppings like pickles, and top with the remaining bun. Serve immediately for the best crispy chicken with chili honey experience.
Notes
For extra crispy chicken, double dredge the chicken: dip it back into the buttermilk mixture briefly after the first flour coating, then coat it again in the flour mixture.
If you are making these sliders for a crowd, you can keep the fried chicken warm in a 200°F oven while you fry the remaining batches.
Adjust the amount of chili crisp or cayenne pepper to control the heat level of your hot honey.
