You can make moist, flaky cod with a sweet and savory honey glaze using common pantry ingredients. This easy baked cod recipe is perfect for a quick weeknight meal.

Ingredients

Scale
  • 4 (6 ounce) cod fillets, about 1 inch thick
  • 1 tablespoon olive oil
  • 1/4 cup honey
  • 2 tablespoons soy sauce (use tamari for gluten free)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried ginger
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish large enough to hold the cod fillets in a single layer.
  2. Pat the cod fillets dry using paper towels. This helps the glaze adhere better. Place the fillets in the prepared baking dish.
  3. In a small bowl, whisk together the honey, soy sauce, minced garlic, Dijon mustard, dried ginger, and black pepper until well combined. This is your sticky honey fish glaze.
  4. Brush half of the honey glaze mixture evenly over the tops of the cod fillets.
  5. Bake for 10 minutes.
  6. Remove the dish from the oven and brush the remaining glaze over the fish.
  7. Return the dish to the oven and bake for another 5 to 8 minutes, or until the fish is opaque throughout and flakes easily with a fork. The total cook time will depend on the thickness of your fillets.
  8. Serve immediately for a delicious cod dinner idea.

Notes

  • For a slight caramelization, you can switch the oven to broil for the last 1 to 2 minutes, watching carefully to prevent burning the honey.
  • If your honey is very thick, warm it slightly before mixing the glaze to ensure smooth incorporation.
  • Serve this perfectly baked cod with roasted asparagus or simple steamed rice.
