Make these rich, fudgy no bake hazelnut cacao bites for a quick, decadent, and satisfying snack. They require simple ingredients and no oven time.

Ingredients

Scale
  • 1 cup creamy hazelnut butter
  • 1/2 cup unsweetened cacao powder
  • 1/4 cup maple syrup or preferred liquid sweetener
  • 1/4 cup finely ground almond flour
  • 1 teaspoon vanilla extract
  • 1/4 cup finely chopped toasted hazelnuts (optional, for texture)
  • Pinch of sea salt

Instructions

  1. Place the hazelnut butter, cacao powder, maple syrup, almond flour, vanilla extract, and salt into a medium mixing bowl.
  2. Mix all ingredients together using a sturdy spoon or spatula until a thick, uniform dough forms. This mixture will be very dense and fudgy.
  3. If using, fold in the finely chopped toasted hazelnuts.
  4. Scoop the mixture using a small cookie scoop or spoon and roll it between your palms to form small, uniform balls, about 1 inch in diameter.
  5. Place the formed bites on a parchment-lined plate or baking sheet.
  6. Refrigerate the bites for at least 30 minutes to allow them to firm up before serving.
  7. Store leftover bites in an airtight container in the refrigerator.

Notes

  • For a richer chocolate flavor, use dark cacao powder.
  • If the mixture seems too dry to hold its shape, add one teaspoon of water or milk alternative at a time until it binds.
  • You can roll the finished bites in extra cacao powder or finely chopped nuts for a decorative finish.
  • These make a great homemade Ferrero Rocher alternative when chilled.
