1 pint cherry or grape tomatoes
1 container (8 ounces) small fresh mozzarella balls (bocconcini or pearls), drained
1 bunch fresh basil leaves
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
12 small wooden skewers
Instructions
Wash and dry the cherry tomatoes and basil leaves. If using larger mozzarella balls, cut them into bite-sized pieces.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. This creates a simple dressing for the skewers.
Thread the ingredients onto the wooden skewers, alternating between a tomato, a basil leaf (folded if large), and a mozzarella ball. Repeat until the skewer is full, ending with a tomato.
Arrange the assembled skewers on a serving platter.
Drizzle the olive oil and balsamic mixture evenly over all the skewers just before serving.
Serve these quick mozzarella tomato basil appetizers immediately.
Notes
For a thicker coating, use a store-bought balsamic glaze instead of making the simple dressing.
You can assemble these make-ahead appetizers up to 4 hours in advance; cover them loosely and keep them refrigerated.
For a gourmet touch, add a pitted Kalamata olive between the tomato and mozzarella.
If you want a low-salt option, skip adding extra salt to the dressing.
