  • 1 pint cherry or grape tomatoes
  • 1 container (8 ounces) small fresh mozzarella balls (bocconcini or pearls), drained
  • 1 bunch fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small wooden skewers

Instructions

  1. Wash and dry the cherry tomatoes and basil leaves. If using larger mozzarella balls, cut them into bite-sized pieces.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. This creates a simple dressing for the skewers.
  3. Thread the ingredients onto the wooden skewers, alternating between a tomato, a basil leaf (folded if large), and a mozzarella ball. Repeat until the skewer is full, ending with a tomato.
  4. Arrange the assembled skewers on a serving platter.
  5. Drizzle the olive oil and balsamic mixture evenly over all the skewers just before serving.
  6. Serve these quick mozzarella tomato basil appetizers immediately.

Notes

  • For a thicker coating, use a store-bought balsamic glaze instead of making the simple dressing.
