This light and crisp salad combines sweet strawberries, cool cucumber, salty feta, and fresh mint, all tossed in a simple lemon vinaigrette. It is a perfect side dish for grilling or a quick, healthy lunch.

Ingredients

  • 4 cups mixed greens (like spinach or spring mix)
  • 2 cups sliced fresh strawberries
  • 1 large English cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. Set aside.
  2. In a large bowl, combine the mixed greens, sliced strawberries, and sliced cucumber.
  3. Gently pour about half of the vinaigrette over the salad ingredients. Toss lightly to coat everything evenly.
  4. Add the crumbled feta cheese and chopped mint leaves to the bowl. Toss once more very gently so you do not crush the berries.
  5. Taste the salad. Add more vinaigrette if desired. Serve immediately for the best texture.

Notes

  • For an extra layer of flavor, toast 1/4 cup of slivered almonds and sprinkle them over the salad just before serving.
  • If you do not have fresh mint, basil makes a good substitute in this summer salad recipe.
  • This salad is best eaten the day it is made. If storing leftovers, keep the dressing separate until serving.
