Make tender, flavorful chicken and rich, savory gravy using your slow cooker. This easy recipe delivers classic comfort food with minimal effort, perfect for busy weeknights.

  • 3 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 packet (1 oz) dry onion soup mix
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/2 cup cold water
  • Mashed potatoes or egg noodles, for serving

Instructions

  1. Place the chicken pieces in the bottom of your slow cooker.
  2. In a separate bowl, mix together the cream of chicken soup, cream of mushroom soup, chicken broth, dry onion soup mix, thyme, and black pepper.
  3. Pour the soup mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker liquid.
  6. To make the gravy, whisk the flour and cold water together in a small bowl until smooth. This creates a slurry.
  7. Stir the flour slurry into the liquid remaining in the slow cooker.
  8. Cover and cook on high for 15 to 20 minutes, stirring occasionally, until the gravy has thickened to your desired consistency.
  9. Serve the crockpot chicken and gravy immediately over hot mashed potatoes or egg noodles.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • If you prefer a country-style gravy, omit the cream of mushroom soup and use 1 cup of milk instead of chicken broth, adding a pinch of sage.
  • If the gravy is too thick after cooking, stir in a splash of extra chicken broth or water until it thins out.
  • This recipe is great for make ahead slow cooker chicken meals; refrigerate leftovers for up to 3 days.
