Make this viral Japanese honey toast dessert at home. Hollowed-out milk bread is toasted until crispy and drizzled with a unique, salty-sweet miso caramel sauce for a satisfying textural treat.

  • 1 thick slice Japanese milk bread (shokupan) or brioche
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon honey
  • For the Swalty Miso Caramel:
  • 1/4 cup granulated sugar
  • 2 tablespoons water
  • 3 tablespoons heavy cream, warmed
  • 1 tablespoon unsalted butter
  • 1 teaspoon white miso paste
  • Pinch of sea salt

Instructions

  1. Prepare the bread: Carefully cut a square border about 1 inch thick around the edges of the bread slice, leaving the center intact but slightly depressed. Do not cut all the way through the bottom crust.
  2. Hollow the center: Gently scoop out the soft bread from the center, leaving the crust walls and the bottom base intact. Cut the removed bread into small cubes.
  3. Butter and toast the bread shell: Brush the inside and outside of the bread shell generously with softened butter. Place the shell and the bread cubes on a baking sheet.
  4. Bake the shell: Bake the bread shell in a preheated oven at 350°F (175°C) for 10 minutes until lightly golden.
  5. Make the miso caramel: Combine sugar and water in a small saucepan over medium heat. Do not stir; swirl the pan occasionally until the sugar dissolves and turns a deep amber color.
  6. Remove the caramel from the heat. Carefully whisk in the warm heavy cream (it will bubble). Whisk in the butter, white miso paste, and sea salt until smooth.
  7. Toast the cubes: While the caramel cooks, toss the bread cubes with the 1 tablespoon of honey. Return the cubes and the bread shell to the oven and bake for another 5-7 minutes until the cubes are golden brown and crispy.
  8. Assemble the toast: Place the crispy bread shell on a serving plate. Fill the hollowed center with the honey-toasted bread cubes.
  9. Drizzle generously with the warm swalty miso caramel sauce. Serve immediately for the best texture.

Notes

  • Use a very thick slice of bread, about 1.5 to 2 inches thick, for the best brick toast effect.
  • If you do not have white miso, you can substitute with 1/2 teaspoon of regular miso, but the flavor will be stronger.
  • For extra richness, you can add a scoop of vanilla ice cream on top before drizzling the caramel.
