  • 1/2 cup crumbled blue cheese
  • 1/4 cup red onion, finely chopped

Instructions

  1. Cook the chicken breasts until done. Let them cool slightly, then dice or shred them.
  2. Cook the bacon until crisp. Drain on paper towels and crumble.
  3. Prepare the hard-boiled eggs and chop them.
  4. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
  5. Arrange the mixed greens on a large platter or in individual bowls to form the base.
  6. Arrange the remaining ingredients in distinct rows across the greens: chicken, bacon, eggs, tomatoes, avocado, and red onion.
  7. Sprinkle the crumbled blue cheese over the top.
  8. Drizzle the homemade red wine vinaigrette over the salad just before serving.
