Zucchini Fritters

Crispy zucchini fritters made with grated zucchini, perfect for a quick snack or side dish.

Ingredients

  • 2 cups grated zucchini
  • 1/2 cup grated cheese
  • 1/4 cup gluten-free flour
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Squeeze excess moisture from grated zucchini.
  2. Mix zucchini, cheese, flour, egg, salt, and pepper in a bowl.
  3. Heat oil in a pan over medium heat.
  4. Drop spoonfuls of the mixture into the pan and flatten slightly.
  5. Cook for 3-4 minutes per side until golden brown.
  6. Drain on paper towels before serving.

Notes

  • Use a clean kitchen towel to squeeze out zucchini moisture.
  • For air fryer version, cook at 375°F for 10-12 minutes, flipping halfway.
