Easy White Chicken Chili

A creamy and flavorful white chicken chili recipe made with tender chicken, white beans, and mild green chilies. This comforting dish is perfect for a weeknight meal.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 3 cups cooked, shredded chicken
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro, for garnish
  • Shredded Monterey Jack cheese, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, diced green chilies, cumin, oregano, chili powder, salt, and pepper. Cook for 1 minute more, stirring constantly.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in the cannellini beans and shredded chicken. Reduce heat to low, cover, and simmer for at least 20 minutes to allow flavors to meld.
  5. Stir in the sour cream until well combined and heated through. Do not boil after adding sour cream.
  6. Ladle chili into bowls and garnish with fresh cilantro and shredded Monterey Jack cheese.

Notes

  • For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • You can use rotisserie chicken for a quick shortcut.
  • This chili is delicious served with cornbread or tortilla chips.
