Ingredients

Scale
  • 15 ounces whole milk ricotta cheese, drained if watery
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • Fresh rosemary sprigs, for garnish

Instructions

  1. Place the drained ricotta cheese, olive oil, lemon juice, salt, and pepper into a food processor.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the dip is completely smooth and fluffy.
  3. Transfer the whipped ricotta dip to a shallow serving bowl.
  4. Drizzle the hot honey evenly over the top of the dip.
  5. Sprinkle the toasted walnuts over the honey.
  6. Garnish with small sprigs of fresh rosemary.

Notes

  • If you do not have a food processor, you can use a high-powered blender or a stand mixer with the whisk attachment. Whip until very smooth.
  • To toast walnuts, place them in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant. Watch them closely to prevent burning.
  • For a savory variation, skip the hot honey and top with roasted garlic cloves and fresh basil instead.
  • This dip tastes best when served the day it is made.
