You can make these simple chocolate chip cookie bars from scratch for a chewy, melt-in-your-mouth dessert that is perfect for any gathering or weeknight treat.

  • 1 cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips and pecans, if using.
  7. Press the cookie dough evenly into the prepared 9×13 pan.
  8. Bake for 20 to 25 minutes, or until the edges are golden brown and the center is set but still slightly soft.
  9. Let the cookie bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares and serve. These are best enjoyed when slightly warm or at room temperature for a chewy texture.

Notes

  • For extra gooey dessert bars, slightly underbake them by about 2 minutes. They will firm up as they cool.
  • You can substitute the pecans with walnuts or leave them out entirely.
  • These pan baked cookies store well in an airtight container at room temperature for up to 4 days.
