Make this simple, flavorful turmeric rice on the stovetop. It uses garlic and butter for a rich taste and cooks quickly, making it a great side dish for weeknight meals.

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups long-grain white rice (Basmati recommended)
  • 1 1/2 teaspoons ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 1/4 cups chicken broth or vegetable broth
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the butter and olive oil in a medium saucepan or pot over medium heat.
  2. Add the chopped onion to the pot and cook until softened, about 4 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Add the rice, turmeric, salt, and pepper to the pot. Stir constantly for 1 to 2 minutes to toast the rice lightly and coat it evenly with the spices and fat.
  5. Pour in the broth. Bring the mixture to a boil.
  6. Once boiling, immediately reduce the heat to the lowest setting, cover the pot tightly with a lid, and simmer for 15 minutes without lifting the lid.
  7. Remove the pot from the heat and let it stand, covered, for an additional 10 minutes. This resting step helps the rice steam fully.
  8. Remove the lid, fluff the rice gently with a fork, and stir in the fresh parsley before serving.
