- 1 gallon water
- 1 cup kosher salt
- 1/2 cup granulated sugar
- 1 tablespoon black peppercorns
- 2 bay leaves
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 lemon, halved
- In a large pot, combine 1 gallon of water, kosher salt, and granulated sugar.
- Heat the mixture over medium heat, stirring until the salt and sugar are dissolved. Do not boil.
- Remove from heat and let it cool slightly.
- Add black peppercorns, bay leaves, thyme, rosemary, and lemon halves to the pot.
- Allow the brine to cool completely before using. You can speed this up by adding a few cups of ice water.
- Once cooled, place your turkey in a large brining bag or container.
- Pour the cooled brine over the turkey, ensuring it is fully submerged.
- Refrigerate for 8 to 12 hours.
- Remove the turkey from the brine, rinse thoroughly with cold water, and pat dry.
- Proceed with your favorite turkey roasting recipe.

- For a deeper flavor, you can add other aromatics like garlic cloves, orange slices, or star anise to the brine.
- Ensure your brining container is large enough to hold the turkey and brine.
- Do not re-use brine after it has been used for the turkey.
