  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • For the Sweet Chili-Lime Sauce: 1/4 cup sweet chili sauce, 1 tablespoon fresh lime juice

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the sweet chili sauce and lime juice. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 5 to 7 minutes. Drain off any excess fat.
  3. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. In a separate small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sriracha, and water. Pour this mixture over the chicken.
  6. Bring the sauce to a simmer and cook, stirring occasionally, until the sauce has thickened slightly and coats the chicken, about 2 to 3 minutes.
  7. Remove the skillet from the heat. Stir in the fresh cilantro.
  8. Arrange the lettuce leaves on a serving platter. Spoon the cooked chicken mixture into the lettuce cups.
  9. Drizzle the prepared sweet chili-lime sauce over the filling. Garnish with chopped peanuts, if using. Serve immediately.
