1 pound ground beef
1 onion, chopped
1 can (10.5 ounces) condensed cream of mushroom soup
1 can (10.5 ounces) condensed cream of chicken soup
1/2 cup milk
1 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen mixed vegetables (peas, carrots, corn)
1 bag (16 ounces) frozen tater tots
1 cup shredded cheddar cheese (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
Stir in the cream of mushroom soup, cream of chicken soup, milk, salt, and pepper. Mix well.
Add the frozen mixed vegetables to the skillet and stir to combine. Cook for 2-3 minutes until heated through.
Pour the beef and vegetable mixture into a 9×13 inch baking dish.
Arrange the frozen tater tots evenly over the top of the mixture.
If using, sprinkle the shredded cheddar cheese over the tater tots.
Bake for 25-30 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly.
Let stand for 5 minutes before serving.
Notes
For crispier tots, ensure they are in a single layer and bake for the full recommended time.
You can substitute turkey or chicken for ground beef.
This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add a few extra minutes to the baking time if baking from cold.
To prevent a watery filling, drain any excess liquid from the browned meat and ensure your condensed soups are not watered down.
