  • 4 medium zucchinis
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 375°F.
  2. Cut zucchinis in half lengthwise and scoop out the centers.
  3. Brown ground beef in a skillet, then add taco seasoning and water as directed on the packet.
  4. Fill zucchini halves with the taco meat mixture.
  5. Top with shredded cheese.
  6. Bake for 20 minutes or until zucchini is tender.
  7. Garnish with diced tomatoes, cilantro, and sour cream.
