This recipe uses Stove Top stuffing mix as a secret ingredient to create the most moist and flavorful meatloaf you have ever made. It is a simple, quick, and satisfying comfort food dinner perfect for any weeknight.

Ingredients

Scale
  • 2 lbs ground beef (80/20 recommended)
  • 1 (6 ounce) package Stove Top Stuffing Mix (Savory Herb flavor)
  • 1 cup water
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup ketchup (for the mix)
  • 1/4 cup packed brown sugar (for the glaze)
  • 2 tablespoons apple cider vinegar (for the glaze)
  • 2 tablespoons ketchup (for the glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×5 inch loaf pan or line a baking sheet with parchment paper if forming a free-standing loaf.
  2. In a large bowl, combine the Stove Top Stuffing Mix and 1 cup of water. Let it sit for 5 minutes to absorb the liquid. This step is key to a moist meatloaf.
  3. Add the ground beef, 2 large eggs, 1/2 cup milk, and 1/4 cup ketchup to the stuffing mixture.
  4. Use your hands to gently mix all ingredients until they are just combined. Do not overmix, or your meatloaf will become tough.
  5. Shape the mixture into a loaf shape and place it in the prepared pan or on the baking sheet.
  6. In a small bowl, whisk together the brown sugar, apple cider vinegar, and the remaining 2 tablespoons of ketchup to create the balsamic glazed meatloaf topping.
  7. Spread the glaze evenly over the top of the meatloaf.
  8. Bake for 55 to 65 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  9. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing. This helps keep the tender loaf dinner juicy.
  10. Serve with your favorite gravy ideas or alongside mashed potatoes for a classic American comfort dish.

Notes

  • For individual servings, form the mixture into 12 small loaves or use a muffin tin to make meatloaf cupcakes. Adjust baking time to about 25-30 minutes for cupcakes.
  • You can substitute ground turkey for ground beef to make a lighter Turkey Meatloaf with Stuffing. If using turkey, you may need to add a tablespoon of oil for moisture.
  • If you prefer a simple gravy instead of the glaze, mix 1 tablespoon of cornstarch with 1/2 cup of cold water. Heat 1 cup of beef broth until simmering, then whisk in the cornstarch mixture until thickened.
