  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides with salt and pepper.
  2. Dredge the pork chops in the flour, shaking off any excess.
  3. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
  4. Sear the pork chops for 2-3 minutes per side until browned. Remove the pork chops from the skillet and set aside.
  5. Add the chopped onion and bell pepper to the skillet. Cook, stirring occasionally, until softened, about 5-7 minutes.
  6. Add the minced garlic and cook for 1 minute more until fragrant.
  7. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  8. Stir in the heavy cream, Worcestershire sauce, thyme, and cayenne pepper (if using). Bring the mixture to a simmer.
  9. Return the pork chops to the skillet. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the pork chops are cooked through and tender.
  10. Serve the smothered pork chops hot, spooning the gravy over the top. Garnish with fresh parsley.
