1 (8 ounce) block full-fat cream cheese, softened
4 slices thick-cut bacon, cooked crispy and crumbled
2 tablespoons fresh chives, chopped
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 cup shredded sharp cheddar cheese (optional topping)
Instructions
Prepare your smoker or pellet grill for indirect heat, aiming for a temperature between 225°F and 250°F. Use a mild wood like apple or cherry for the best flavor.
Leave the cream cheese in its foil wrapper. Score the top of the cream cheese block in a crisscross pattern, about 1/4 inch deep.
Sprinkle the smoked paprika, garlic powder, and black pepper evenly over the scored cream cheese.
Place the cream cheese directly on the grill grate, away from direct heat. Smoke for 60 to 90 minutes, or until the cheese is very soft and has absorbed a noticeable smoky flavor. Do not let it melt completely.
Carefully remove the smoked cream cheese from the smoker and place it in a serving bowl.
Use a fork or spoon to mix the softened cheese until it is smooth.
Fold in half of the crumbled bacon and half of the chopped chives. Mix gently.
Transfer the dip back into a clean serving dish or leave it in the original foil container if desired.
Top the dip with the remaining bacon, chives, and the shredded cheddar cheese, if using.
Serve warm with crackers, tortilla chips, or vegetable sticks.
Notes
For a stronger smoke flavor, you can use the cold smoke method on the cream cheese for 2-3 hours before mixing and serving warm.
If you do not have a smoker, you can achieve a similar taste by mixing 1 teaspoon of liquid smoke into the softened cream cheese before mixing in the toppings.
This dip is excellent served with sturdy crackers or slices of toasted baguette.
