2 lbs boneless, skinless chicken breasts or thighs
Place the chicken breasts in the bottom of your slow cooker.
In a medium bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper until smooth.
Pour the sauce mixture evenly over the chicken in the slow cooker.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shredded.
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce and stir to coat.
If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the sauce in the slow cooker. Cook on HIGH for 15 to 20 minutes, stirring occasionally, until the sauce thickens.
