Make this easy, comforting slow cooker garlic parmesan chicken for a flavorful weeknight dinner. The chicken cooks until tender in a rich, creamy sauce.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch (for thickening, optional)
  • 2 tablespoons cold water (for slurry, optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper until smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce and stir to coat.
  6. If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the sauce in the slow cooker. Cook on HIGH for 15 to 20 minutes, stirring occasionally, until the sauce thickens.
  7. Serve hot over pasta, rice, or enjoy as a low carb option.
