Slow Cooker Chicken and Dumplings

A comforting and easy one-pot chicken stew with fluffy dumplings, perfect for a cozy meal.

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (16.3 ounce) can refrigerated biscuit dough, cut into 1-inch pieces

Instructions

  1. Place chicken, carrots, celery, and onion in your slow cooker.
  2. Pour in chicken broth and sprinkle with thyme, pepper, and salt.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  4. Remove chicken from the slow cooker and shred it. Return the shredded chicken to the pot.
  5. Bring the liquid in the slow cooker to a simmer.
  6. Drop the biscuit pieces on top of the simmering stew.
  7. Cover and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.

Notes

  • For a creamier stew, you can stir in 1/4 cup of heavy cream or half-and-half during the last 30 minutes of cooking.
  • You can also make your own dumpling dough from scratch if you prefer.
  • This recipe is a great example of simple meal planning for busy weeknights.
