- 2 pounds boneless, skinless chicken thighs or breasts
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 (16.3 ounce) can refrigerated biscuit dough, cut into 1-inch pieces
- Place chicken, carrots, celery, and onion in your slow cooker.
- Pour in chicken broth and sprinkle with thyme, pepper, and salt.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it. Return the shredded chicken to the pot.
- Bring the liquid in the slow cooker to a simmer.
- Drop the biscuit pieces on top of the simmering stew.
- Cover and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.
Notes
- For a creamier stew, you can stir in 1/4 cup of heavy cream or half-and-half during the last 30 minutes of cooking.
- You can also make your own dumpling dough from scratch if you prefer.
