1 pound large shrimp, peeled and deveined
8 ounces linguine or zucchini noodles
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup dry white wine or chicken broth (optional)
1/4 cup fresh lemon juice
1/4 teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
Cook linguine according to package directions. If using zucchini noodles, prepare them while the shrimp cooks.
Melt butter in a large skillet over medium heat.
Add minced garlic and red pepper flakes (if using) to the skillet and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
Add shrimp to the skillet in a single layer. Season with salt and pepper.
Cook shrimp for 1-2 minutes per side, until pink and opaque. Do not overcook.
If using wine or broth, pour it into the skillet and let it simmer for 1 minute, scraping up any browned bits from the bottom of the pan.
Stir in lemon juice and parsley.
Add the cooked linguine or zucchini noodles to the skillet and toss to coat with the sauce.
