1 tablespoon olive oil
1 large onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
1.5 pounds ground lamb
2 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 cup all-purpose flour
1 cup beef broth
2 tablespoons Worcestershire sauce
1 cup frozen peas
Salt and black pepper to taste
2 pounds potatoes, peeled and quartered
1/2 cup milk
4 tablespoons butter
1/4 cup grated cheddar cheese (optional)
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
Add ground lamb to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess fat.
Stir in minced garlic, rosemary, and thyme. Cook for 1 minute until fragrant.
Sprinkle flour over the meat and vegetable mixture. Stir well and cook for 1-2 minutes.
Gradually pour in beef broth and Worcestershire sauce, stirring constantly until the mixture thickens into a gravy.
Bring to a simmer, then stir in frozen peas. Season with salt and pepper to taste. Remove from heat.
While the filling cooks, boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
Mash the potatoes with milk and butter until smooth and creamy. Season with salt and pepper.
Spread the mashed potatoes evenly over the meat filling in the skillet. Use a fork to create peaks on the potato topping, which will crisp up nicely. Sprinkle with cheddar cheese, if using.
Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
Let stand for 10 minutes before serving.
Notes
For a cottage pie, substitute ground beef for ground lamb.
If you don’t have an oven-safe skillet, transfer the filling to a baking dish before topping with mashed potatoes.
Add a splash of red wine to the gravy for extra depth of flavor.
