Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup melted butter, plus more for greasing
  • 1 teaspoon vanilla extract
  • 1 cup mix-ins (blueberries, chocolate chips, or cooked sausage/cheese)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 13×9 inch baking sheet generously with butter or cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  5. Gently fold in your chosen mix-ins, like blueberries or cooked sausage.
  6. Pour the batter evenly onto the prepared baking sheet. Spread it gently to cover the bottom.
  7. Bake for 15 to 20 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven. Let it cool for a few minutes before slicing into squares. Serve immediately with your favorite toppings.

Notes

  • For a protein boost, substitute half the flour with Kodiak Cakes mix.
  • If you are using fresh berries, toss them lightly in a teaspoon of flour before adding them to the batter to prevent sinking.
  • This recipe is a great alternative to traditional meal planning when you need a fast, satisfying breakfast.
  • Slice into squares for easy serving when preparing breakfast for a crowd.
