Easy one-pan fajitas with roasted chicken, peppers, and onions for a quick weeknight dinner.

  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small flour tortillas
  • Lime wedges for serving

Instructions

  1. Preheat oven to 425°F.
  2. Toss chicken, peppers, and onions with olive oil, fajita seasoning, salt, and pepper.
  3. Spread evenly on a sheet pan.
