A hearty and easy make-ahead breakfast casserole featuring sausage, eggs, cheese, and bread, perfect for feeding a crowd on busy mornings or holidays.

  • 1 pound bulk pork sausage
  • 12 slices day-old bread, cubed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large eggs
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. In a large skillet, cook the sausage over medium-high heat until browned. Drain off any excess grease.
  2. In a greased 9×13 inch baking dish, layer the cubed bread, cooked sausage, cheddar cheese, and Monterey Jack cheese.
  3. In a separate bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  4. Pour the egg mixture evenly over the bread and cheese mixture in the baking dish.
  5. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350°F (175°C).
  7. Remove the plastic wrap and bake for 45-55 minutes, or until the casserole is set and golden brown on top.
  8. Let stand for 5-10 minutes before serving.

Notes

  • Using day-old bread helps prevent a soggy casserole.
  • You can substitute other cheeses like Colby Jack or Swiss.
  • For a spicier casserole, add a pinch of red pepper flakes to the egg mixture.
  • This casserole can be assembled up to 24 hours in advance.
