1 pound ground beef
8 ounces dried lo mein noodles (or spaghetti/linguine)
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 cups shredded cabbage
1 cup shredded carrots
4 green onions, sliced (separate white and green parts)
1/4 cup low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
1/2 teaspoon black pepper
Instructions
Cook the noodles according to package directions. Drain them and set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
Add the minced garlic, grated ginger, and the white parts of the green onions to the skillet. Cook for one minute until fragrant.
Add the shredded cabbage and carrots to the skillet. Stir fry for 3 to 4 minutes until the vegetables begin to soften slightly.
In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, sesame oil, and black pepper to create the sauce.
Pour the sauce mixture over the beef and vegetables. Stir well to coat everything. Cook for one minute until the sauce thickens slightly.
Add the cooked noodles to the skillet. Toss everything together until the noodles are evenly coated with the sauce and heated through, about 2 minutes.
Remove from heat. Stir in the green parts of the sliced green onions. Serve immediately.
Notes
If you do not have oyster sauce, you can substitute it with an equal amount of hoisin sauce for a similar savory depth.
For a spicier kick, add 1/2 teaspoon of red pepper flakes when you add the garlic and ginger.
