1.5 lbs boneless, skinless chicken breast, cut into 1-inch pieces
1 large head of fresh broccoli, cut into bite-sized florets
1 tablespoon vegetable oil
1 teaspoon sesame oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 teaspoon cornstarch
1/4 cup water or chicken broth
Cooked white or brown rice, for serving
Instructions
In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, cornstarch, and water or broth. Set the sauce aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the sesame oil to the same skillet. Add the minced garlic and grated ginger. Cook for about 30 seconds until fragrant.
Add the broccoli florets to the skillet. Stir-fry for 3 to 4 minutes until the broccoli turns bright green and is slightly tender-crisp. You can add a tablespoon of water and cover the skillet briefly to steam the broccoli if you prefer it softer.
Return the cooked chicken to the skillet with the broccoli.
Give the prepared sauce a quick whisk and pour it over the chicken and broccoli.
Stir constantly until the sauce thickens and coats everything evenly, about 1 to 2 minutes.
Remove from the heat immediately. Serve your easy chicken and broccoli recipe hot over cooked rice.
Notes
For a low-carb option, serve this garlic chicken broccoli dish over cauliflower rice instead of traditional rice.
If you want a little heat, add 1/2 teaspoon of red pepper flakes when you cook the garlic and ginger.
You can substitute chicken thighs for chicken breast if you prefer darker meat.
