A crunchy, cluster-filled granola with pumpkin purée and warm spices, perfect for fall breakfasts or gifting.

Ingredients

  • 3 cups rolled oats
  • 1/2 cup pumpkin purée
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • 1/4 cup pepitas

Instructions

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix pumpkin purée, maple syrup, coconut oil, pumpkin pie spice, cinnamon, and salt.
  3. Add oats, pecans, and pepitas. Stir until evenly coated.
  4. Spread the mixture on the baking sheet in an even layer.
  5. Bake for 30 minutes, stirring halfway, until golden and crisp.
  6. Let cool completely before breaking into clusters.

Notes

  • Store in an airtight container for up to 2 weeks.
