6 cups Rice Chex cereal
1 cup white chocolate chips
1/2 cup creamy peanut butter (optional, for flavor depth)
1/4 cup unsalted butter
1 teaspoon vanilla extract
1 (3.4 oz) box instant pistachio pudding mix
2 cups powdered sugar
1/2 cup chopped pistachios (optional mix-in)
Instructions
Place the Rice Chex cereal in a very large bowl. Set aside.
In a medium microwave-safe bowl, combine the white chocolate chips, peanut butter (if using), and butter. Microwave in 30-second intervals, stirring well after each, until the mixture is completely smooth. This usually takes about 1 to 1.5 minutes total.
Stir the vanilla extract into the melted chocolate mixture.
Pour the melted chocolate mixture over the cereal in the large bowl. Gently fold the cereal until it is evenly coated.
Sprinkle the entire box of instant pistachio pudding mix over the coated cereal. Gently fold again until the cereal is lightly dusted with the green powder.
Place the powdered sugar into a large zip-top bag. Add the coated cereal mixture to the bag. Seal the bag and shake well until all the cereal pieces are thoroughly covered in powdered sugar.
Spread the finished Pistachio Puppy Chow onto a sheet of parchment paper to cool and dry. If you are adding chopped pistachios, sprinkle them over the mix while it is still slightly sticky.
Once completely cool, break apart any large clumps and store the crunchy sweet treats in an airtight container.
Notes
For a stronger pistachio flavor, use the pistachio pudding mix and add 1/4 teaspoon of pure pistachio extract to the melted chocolate mixture.
If you skip the peanut butter, you may need to add 1 tablespoon more butter to keep the chocolate coating smooth enough to coat the cereal.
