1/2 cup (115g) unsalted butter, melted
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup (40g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup (120g) creamy peanut butter (for the swirl)
2 tablespoons powdered sugar (for the swirl)
1 tablespoon milk or cream (for the swirl)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, mix the melted butter and granulated sugar until combined.
Whisk in the eggs one at a time, then stir in the vanilla extract.
In a separate small bowl, whisk together the cocoa powder, flour, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix the batter.
Pour the brownie batter into the prepared pan and spread it evenly.
In another small bowl, prepare the peanut butter swirl mixture: Combine the creamy peanut butter, powdered sugar, and milk. Mix until smooth and easily spreadable.
Drop spoonfuls of the peanut butter mixture over the brownie batter.
Use a knife or a skewer to gently swirl the peanut butter into the chocolate batter. Create figure-eight motions for a marbled effect, but avoid mixing too deeply.
Bake for 25 to 30 minutes. The brownies are done when a toothpick inserted near the center comes out with moist crumbs attached.
Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Cut into 16 squares and serve your rich dessert bars.
