- 2 cups granulated sugar
- 1 cup light corn syrup
- 1 cup roasted, salted peanuts
- 2 tablespoons butter
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- Grease a large baking sheet or line it with parchment paper.
- In a heavy-bottomed saucepan, combine sugar and corn syrup. Cook over medium heat, stirring until sugar dissolves.
- Bring the mixture to a boil without stirring. Cook until it reaches 260°F (127°C) on a candy thermometer.
- Stir in the peanuts and continue to cook, stirring constantly, until the mixture reaches 300°F (150°C).
- Remove from heat. Quickly stir in the butter, baking soda, and vanilla extract. The mixture will foam up.
- Pour the mixture onto the prepared baking sheet and spread it thinly.
- Let it cool completely, then break into pieces.
Notes
- For a smoother brittle, you can lightly butter your hands before handling the hot mixture, but be very careful.
- Store peanut brittle in an airtight container at room temperature.
