A hearty and easy beef chili recipe perfect for a weeknight meal. This one-pot wonder is packed with flavor and can be customized with your favorite beans, vegetables, and spice level.

  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup beef broth
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced red onion, jalapeños

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes, diced tomatoes, kidney beans, pinto beans, black beans, and beef broth. Stir to combine.
  5. Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally. For a thicker chili, you can simmer uncovered for the last 15-20 minutes.
  6. Taste and adjust seasonings as needed.
  7. Serve hot with your favorite toppings.

Notes

  • For a no-bean chili, omit the canned beans and add an extra can of diced tomatoes or a bit more broth.
  • To thicken chili without flour, mash some of the beans against the side of the pot with your spoon, or simmer uncovered for longer.
  • This chili freezes well. Let it cool completely, then store in airtight containers for up to 3 months.
