1 cup all-purpose flour
2 cups rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a medium bowl, whisk together the flour, rolled oats, and baking soda. Set this dry mixture aside.
In a large bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Fold in the chocolate chips using a spatula.
Press the dough evenly into the prepared baking pan.
Bake for 22 to 25 minutes, or until the edges are golden brown and the center is set.
Remove the pan from the oven and let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Once cool, cut the oatmeal bars into squares.
Notes
For a healthier oat snack variation, substitute half the chocolate chips with dried cranberries or chopped walnuts.
To keep these bars soft and chewy, avoid overbaking. Check them at the 20-minute mark.
These bars are excellent for meal prep and store well in an airtight container at room temperature for up to 5 days.
