A quick and easy single-serving gingerbread mug cake perfect for festive gatherings.

Ingredients

Scale
  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground cloves
  • Pinch of salt
  • 1/4 teaspoon baking powder
  • 3 tablespoons milk
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon molasses
  • 1/4 teaspoon vanilla extract
  • Optional: Whipped cream or powdered sugar for topping

Instructions

  1. In a microwave-safe mug, whisk together the flour, sugar, ginger, cinnamon, cloves, salt, and baking powder.
  2. Add the milk, melted butter, molasses, and vanilla extract to the mug. Stir until just combined and no dry streaks remain. Do not overmix.
  3. Microwave on high for 60-90 seconds, or until the cake is set and cooked through. Cooking time will vary depending on your microwave’s wattage.
  4. Let the mug cake cool for a minute before topping with whipped cream or powdered sugar, if desired.

Notes

  • For a richer flavor, you can add a pinch of nutmeg.
  • If you don’t have molasses, you can substitute with dark corn syrup, though the flavor will be slightly different.
  • Ensure your mug is large enough to accommodate the cake as it rises.
