Easy Copycat Mexican Pizza Recipe (Under 30 Minutes)

Make this simple, crispy Mexican Pizza at home that tastes just like your fast-food favorite. It uses ground beef, refried beans, and cheese for a quick weeknight dinner.

  • 2 cups seasoned ground beef (cooked)
  • 1 (16 ounce) can refried beans
  • 1 cup enchilada sauce
  • 1 cup shredded Mexican cheese blend
  • 6 flour tortillas (about 8-inch size)
  • 1 tablespoon vegetable oil
  • Toppings: Shredded lettuce, diced tomatoes, sliced black olives, sour cream (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly brush both sides of the flour tortillas with vegetable oil.
  2. Place tortillas on baking sheets. Bake for 5 to 7 minutes, or until they are lightly golden and crisp. Remove from oven.
  3. Spread a thin, even layer of refried beans over the top of three of the crisp tortillas.
  4. Spoon half of the seasoned ground beef over the beans on those three tortillas.
  5. Spoon a thin layer of enchilada sauce over the ground beef on the same three tortillas.
  6. Place the remaining three crisp tortillas on top of the beef layer to create three double-layered pizzas.
  7. Spread the remaining refried beans, ground beef, and enchilada sauce over the top layer of each pizza.
  8. Sprinkle the shredded cheese evenly over the top of all three pizzas.
  9. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven. Top each Mexican Pizza with shredded lettuce, diced tomatoes, and black olives. Serve immediately with sour cream if desired.

Notes

  • For the seasoned ground beef, cook 1 pound of ground beef and drain the fat. Mix in one packet of taco seasoning according to package directions.
  • If you want a shortcut for meal planning, this recipe is a great alternative to relying on meal delivery companies.
  • To get extra crispy tortillas, you can lightly fry them in oil instead of baking.
