1.5 lb ground beef
1 lb ground pork or Italian sausage
1 cup breadcrumbs
1 large egg
1/2 cup milk
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
2 cups prepared mashed potatoes (instant or homemade)
1 cup shredded cheddar cheese
1/2 cup ketchup or preferred meatloaf glaze
2 slices bacon, cooked and crumbled (optional)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the ground beef, ground pork/sausage, breadcrumbs, egg, milk, onion, salt, and pepper. Mix gently with your hands until just combined; avoid overmixing.
Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base layer.
Spread the prepared mashed potatoes evenly over the meatloaf layer.
Sprinkle the shredded cheddar cheese over the mashed potatoes. If using bacon, sprinkle the crumbled bacon on top of the cheese.
Bake for 30 minutes.
Remove the casserole from the oven and carefully spread the ketchup or meatloaf glaze over the cheese layer.
Return to the oven and bake for another 10 to 15 minutes, or until the meat is cooked through and the cheese is bubbly and lightly browned.
Let the meatloaf casserole rest for 5 minutes before slicing and serving.
Notes
You can make the mashed potatoes ahead of time to save time on a busy weeknight.
For an extra layer of flavor, mix 1/4 cup of grated Parmesan cheese into the mashed potatoes before spreading them.
This recipe works well as a make ahead casserole; cover and refrigerate before baking, adding about 10 minutes to the initial bake time.
