Welcome to My Kitchen! I am Carla Davis, and I created these Easy Homemade McGriddle Bites to bring that comforting, sweet and savory flavor back to your busy mornings. These mini breakfast sandwiches, baked in a muffin tin, are perfect for meal prep and freezing. They taste just like the drive-thru favorite but are simple to make at home.

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter, plus more for greasing
  • 2 tablespoons maple syrup, plus more for serving
  • 1 cup cooked, crumbled breakfast sausage (about 8 links)
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup standard muffin tin or a 24-cup mini muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, 2 tablespoons of melted butter, and 2 tablespoons of maple syrup until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the cooked, crumbled breakfast sausage and the shredded cheddar cheese.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean. If using a mini muffin tin, baking time may be closer to 12-15 minutes.
  8. Let the McGriddle Bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Serve warm with extra maple syrup for dipping.

Notes

  • For freezer-friendly storage, let the bites cool completely. Place them in a freezer-safe bag or container. Freeze for up to 3 months.
  • To reheat, microwave a frozen bite for 30-60 seconds, or bake from frozen at 350°F (175°C) for about 10-15 minutes.
  • If you want a higher protein option, substitute half the all-purpose flour with a high-protein pancake mix.
