Creamy sun-dried tomato skillet chicken ready in 30 minutes, perfect for a romantic weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add sun-dried tomatoes and garlic. Cook for 1 minute.
  4. Pour in heavy cream and chicken broth. Stir in Italian seasoning and Parmesan cheese.
  5. Return chicken to the skillet and simmer for 5 minutes until sauce thickens.
  6. Garnish with fresh basil before serving.

Notes

  • Serve over pasta or with crusty bread.
  • For a lighter version, substitute half-and-half for heavy cream.
